I would call him Jimmy ... because that's what I called him so many years ago after the shows in the bars in Dallas ... not that he would remember me at all ... I was just one of many who hung around the edges of the Jimmy/JJW/WAR show ... but I really think I would use Jimmy ... or faint. One of the two would probably happen.

What I imagine doing is exclaiming "JIMMY!" and giving him a great big hug. What WOULD happen is I'd become star-struck, shy, and just peep out a little "hi."
I've met celebrities in the past, and you guys are right -- it happens so fast, you don't get time to to say anything you've prepared -- it's like a whirlwind. They zip you backstage and there's lots of commotion and people -- bodyguards, PR people, other security, other fans, miscellaneous people, etc. Before you know it, it's over and you didn't get to say one syllable of what you'd prepared. Not to mention, most of the time, the celeb hardly says anything at all -- they're a little more introverted when they meet fans -- they don't know us, but we feel like we've known them all our lives.
I've actually walked away from meeting stars quite underwhelmed -- Howie Mandel, Aerosmith, Gwen Stefani, Green Day, Offspring, GooGoo Dolls, Fuel, Cinderella, David Coverdale of Whitesnake, Kid Rock, Our Lady Peace, Nickelback, Sum 41, Bob Barker... (I'm not a celeb stalker --I used to be a DJ for several years on a Buffalo radio station).
Actually, the only one that was outgoing and very "huggable" was Steven Tyler of Aerosmith. The rest of the celebs/rock stars I've met came across as very shy. I could imagine Jimmy being like that. Is he?

Well, if I am ever lucky enough to be in the right place at the right time to meet Jimmy I think I would just say "hi Jimmy!" That would probably bee all that time would allow anyway.
I met Benmont Tench, my favorite keyboard player and Heart Breaker in Tom Petty and the Heart Breakers, a couple of years ago. The whole thing happened so fast, and I sure was not expecting it. I was zipped back stage, and I had no clue what was coming. Then Benmont came up to me, introduced himself to me, gave me a hug, and we talked for a minute or two before he had to go and get ready for the show. There is never time to think about what you are going to say, and if you do think about something to say you will forget it the minute you meet the person.
If I were to ever meet Jimmy I will deal with it if that time ever should come.
