Just pico de gallo. Not "real" salsa. I've got a few of Rick Bayless' cookbooks, & want to try some of his recipes.

Another pico de gallo maker here.

Tomatoes
Vidalia or Maui onion
Lots of Garlic
Jalapenos
Lime Juice
Cilantro
Salt

Cilantro tastes like rusty soap to me, so I use it very, very sparingly- like 10 leaves for 4 tomatoes. I use whatever's in season for tomatoes, I haven't seen local Romas yet this year.

YES!!

Just sat down after making this!

1 mango, chopped small
1 red pepper, chopped small
1 red onion, chopped small
1/4 cup cilantro, chopped
1 teaspoon garlic, minced
1/4 cup pineapple juice
6 tablespoons lime juice
1 tablespoon fresh chili pepper, chopped
Salt and pepper, to taste

Of course, you can change peppers and spices for the amount of "heat" that you like. I added some red pepper flakes to it also.

This is good on blackened grilled tilapia.

I used to pour it through some cheesecloth or filter paper (coffee filter will do) to make it less watery.

Tomatoes
Onions
Bell Peppers
green onions..
salt
pepper
minced garlic
touch of beer
touch of V-8 (just enough to get some liquid)

I dice by hand.. chunky 8)


if I want hot.. Thai hot sauce..

don't forget to wear those cafeteria lady gloves when preparing - the one (and only) time I made salsa - my hands got a horrible reaction to all of the tomato / pepper chopping - they swelled up and got itchy and red....it was horrible .... :cry: :( but the salsa was tasty - lots of peppers and cilantro!! :D
And raccoons brought wine and the mice they brought cheese...

< no gloves.. BUT.. I don't use fresh chili (hot) peppers for my Salsa..

(for dry.. soak in the beer prior to adding)

yeah that didn't help either - lots of jalepenos ..... oh yeah - another tip - don't rub your eyes after you have been chopping fresh jalepeno peppers....

Yikes!

If you should happen to go to the bathroom, rub your nose, etc, a mix of sour cream or yogurt and powered sugar really does help.
