Saloon owner cites need for changes

The Hog's Breath Saloon was closed Tuesday and will reopen this evening after undergoing significant management changes and property maintenance.

Employees of the popular open-air bar and restaurant were shocked on Tuesday to learn that longtime General Manager Charlie Bauer had been replaced by Bryce Averitte, who hails from the Florida Panhandle.

Bauer had been with the bar since it opened in October 1988, joining founder Jerry Dorminy in the venture.

"Charlie IS the Hog's Breath," one patron said.

Dorminy found the location and hired Bauer to run the business 20 years ago almost to the day, Bauer said on Tuesday.

But Dorminy died two years ago, and his widow decided it was a time for a management change, Bauer said.

"She is still the owner, but the business is under new management," he said. "She wants to keep the place in the same style, but wants to make a change in management.

"It's been a good run, and things happen for a reason."

Bauer added that he plans to stay in Key West and remain in the same industry, although he was not ready to announce a specific location. "This has been a great place to work, so thank you, Key West," he said.

Kelly Miille, the comptroller of the Destin-based Hog's Breath company, on Tuesday confirmed that Averitte had replaced Bauer as general manager.

"Bryce has been in the business for many, many years," she said, calling the situation a simple change in management, but not providing additional information.

"It will be business as usual, and the same Hog's Breath as it's always been," Miille said.

oh lordy. Is the one in Destin run by this guy ? That one certainly doesn't have the 'ambience' of the one in Key West.

Then again, none of the other Margaritavilles have the same ambience as the one in KW either, and Destin ain't KW. You kinda have to go with what works in the local market.
