I sauteed it with olive oil, garlic, hot pepper flakes, salt and pepper. It wasn't awful, it wasn't amazing. I could eat it once in awhile since it is so good for you. I'm trying to incorporate more dark green veggies.

Well, I'm sure it's NOT good for you the "Southern way" but we just boil the
goodness out of it and then hit it with some really bad-for-you bacon grease & salt.
At least it's not limp and "slimy" like turnip greens can get. I like them too, tho.

you know during the dust bowl people soaked tumbleweeds in brine and ate them

I love swiss chard- not so much on the kale though.
What I do to make it edible is saute onion and garlic in chicken stock, then the kale in it, cook it through, then I add a block of fat free cream cheese, milk, some creole seasoning, some cooked chicken and some parmesan, then serve over pasta. It takes less than a half hour.
Last time I made the greens separately, then put the sauce over the top. It was fine, but one more bowl to clean.
I saute in the stock to keep the oil from floating up through my sauce and looking gross, but oil and full fat cheese work fine (why add the fat and calories though?).

they would be like asparagus. They weren't... but I just had to try, right?
I'm not sure if I'd be so daring now, but I used to try a wild food or two back
in my 20s. I never could figure out how cat tails were edible, even though the
book said they were.

I like kale in soup. And I like collard greens the "Southern Way"... Not all that good for you, but they taste good!

I put it in some homemade turkey soup - it was a way to get the benefits and it just seemed like there was spinach in it.

You remind me of my husband's niece. She was served dinner at her gammy's
house in WVa at about the age of four. She looked up at her grandmother and told
her "We don't eat weeds at our house, Gammy".

I wonder what has the most nutritional value though?
I tried cooking briar shoots a couple of times. A field guide book I had said
they would be like asparagus. They weren't... but I just had to try, right?
I had a hippy mother who went through a wild food phase. I have had queen anne's lace which was supposed to be like carrots, milk weed I think, and wild tiger lilies - both buds and flowers among other things. My poor kids have been denied the wild food experience. If I had ever tried to feed them kale they'd revolt for sure.

I wanted to try day lily buds, but I would have missed the pretty flowers
and have been disappointed if they hadn't tasted good. We have had wild
sorrel added to salads a few times. It's pretty good. And alfalfa sprouts
instead of lettuce on sandwiches. (I'm probably your mom's age, after all.)
BTW, bear jerky and fried moray are both pretty good.
