You notify the police that you have recovered this money and that you are sticking in an interest bearing account at the bank. If no one shows up to claim it, you get the money and then interest and if they do show up and claim it, you get the interest.
I see no point in letting it sit in a police evidence locker where something bad could happen to it when I could put into several FDIC insured accounts at various banks where it would be safe.
