Watermelon Salad

This was a hit at the Camden tailgate on 6/20. Well, OK, all of the food that everyone cooked was gobbled up like crazy, and the grill masters that weekend were in rare form, but ya gotta have a side dish or two, right??

I am not always big into measuring, so with the watermelon salad I just kind of wing it.

Watermelon Salad

1 small seedless watermelon, cut into cubes. (Like the next size up from a cantelope, not the hugest watermelon you can find...)
Crumbled Feta Cheese, up to 1 pound, depending on how much you like it and how much watermelon you use.
Mint, finely chopped. I roll the leaves up and slice. Again- use to your taste and also availability. I have it growing like weeds, so I can use a lot.
Freshly cracked black pepper- more than you think you need :) You want to actually see the pepper flakes on the watermelon!
salt- large pinch
Optional: crushed red pepper flakes to make it spicier
Optional: drizzle with olive oil just before serving

Mix, serve chilled, and try to use the freshest watermelon you can find, it seems to taste crisper that way.

You could omit the mint and try basil, and I am going to use blueberries when I make it this weekend to make it look 'red white & blue'.

This would be party size- like 3 quarts maybe? For more family size or a smaller batch, just use half the watermelon, and less feta. Don't buy the pre-crumbled feta- it is so easy to crumble right in your fingers and it is cheaper to buy whole.

LOVE, LOVE, LOVE THIS. I only use watermelon, feta cheese, and freshly ground black pepper. But........Im liking the idea of the blueberries too, for the 4th. Thanks for the suggestion/reminder :)
