Help: Need your best recipe for...yes, gumbo.

Living in Oklahoma and never having ventured into Louisiana, I've never tried gumbo. Now, though, "I Will Play for Gumbo" has me curious and wanting to try it.
I'm sure I could get a decent bowl in OKC, but I'd rather stay home and make my own.
I've found a few decent seeming recipes on the net, but more are welcome. If any here know some great gumbo recipes, I'd appreciate seeing them.
Just know, though, that I'll cut back the spices in any recipe I ultimately make. Might be Cajun sacrilege, but I'm not a fan of really spicy foods.
