What are your favorite healthy things to eat/recipes that don't require turning on a eat source in the kitchen or using the microwave?

Stuffed tomatoes or avocados with tuna salad (just a little mayo & pickles)

Fruit salad with raw spinach or spring mix and walnuts.

Turkey roll-ups with Boston leaf lettuce and wasabi mayo.

Smoothies--I use milk and yogurt and strawberries.

I know these are all so simple...pineapple with cottage cheese and pecans.

Pita pocket with coleslaw and sandwich meat like baked turkey slices or Canadian bacon.

Carrot salad with raisins.

Sliced up apple with Laughing Cow Lite Cheese and whole grain saltines and peanuts.

Peanut butter on whole grain bread with banana slices. I usually toast my bread tho.

I'm loving tomatoes and fresh mozzerella cut up and drizzled with a little olive oil/basil vinegar and some fresh basil and chives.

we've been eating a lot of corn on the cob too...but that does require heat. But it has been soooo good this year.

Lots of fruit salads. Fresh nectarines, fresh honeyrocks, blueberries, strawberries, etc. No dressing...good just as they way they are.

Todd loves the version of this that Bucca's serves. So, today at the store I looked at the fresh mozzerella and found they had some on sale for $1.99 :o so we'll be having that in the near future :D

and the fruit is def a good summer treat :D but we've got some fresh whipped cream in the fridge and I may add a little to the strawberries (and I usually add some equal too :oops: )

tomatoes are one of my favorite parts of summer, and you are right on with keeping it simple sometimes. i love tomatoes with salt and whole grain bread (sometimes w/ mayo and sometimes not)

i've never tried dill on them, but i will soon. it sounds good :D

healthy food definitely isn't boring at your house! :D

i LOVE peanut butter and banana sammiches

and the smoothies are a great idea too :D much better for you than icecream

I have some great opal basil vinegar that the herb lady at the farmer's market makes...that and a little olive oil drizzled over it... Yummy

it always feels good when your potluck contribution goes over well :D

i usually grow basil and tomatoes during the summer but with the move i couldn't this year. and fresh basil is so expensive at the store unless you can find it on overstock sale :( but next year

there's s'pose to be a good farmer's market at North Market here in Columbus. i haven't been because it runs until noon and i'm rarely awake, alert and dressed before noon on Saturday :oops: :lol: but maybe i should give it a try this weekend

I'm at the farmer's market by 8 every Saturday morning. And most Wednesday mornings as well. Last Saturday I was at an estate sale at 7 a.m. I've been retired for 6 years and I've yet to sleep past 7:30. :P

i wish i could be that way :oops: and i used to be... i was at the gym for yoga at 6:00 am when i lived over 30 miles from the gym :o but lately (the last few years) it's been harder and harder to drag my butt out of bed before i have to :oops:

I have two basic groups of friends that I have done pot lucks with in the past. They are as different as night and day.
Group one: Gotta keep it simple. Something along the lines of Sweet and Sour Meatballs.
Group two: Bring Meatballs and they look at you like, WTF? Didn't have time to cook???

True story, I decided I was gonna give group one a bit of something different so I did Bananas Foster. Hardly anyone even tried them. With this group you stick to Beanie Weenies.

Group one: Gotta keep it simple. Something along the lines of Sweet and Sour Meatballs.
Group two: Bring Meatballs and they look at you like, WTF? Didn't have time to cook???

True story, I decided I was gonna give group one a bit of something different so I did Bananas Foster. Hardly anyone even tried them. With this group you stick to Beanie Weenies.
the folks at work are like that. some of them are even the type that buys wonderbread for their sandwhiches at lunch and sits there and pulls the crust off before they will even think about eating it :roll: and the list of simple/normal stuff that they refuse to eat even though they've never tasted it because "it's wierd" is 1,000's of miles long :roll:

once i found something they liked, i just kept making the same thing every year for the christmas party. the receptionist who liked a lot of the kinds of food that i did and has worked there for years told me that was the best plan. and that she had given up years ago

but i've also been to pot lucks with the Whole Foods shopping semi-pro gourmet chefs that turn it into a competition and make folks that bring something simple and easy feel bad.

on the other hand, my phc.... when they hear 'bring something to share', a lot of folks assume someone else will. so if you bring anything edible and put in on the table, it dissappeared quickly :lol: :lol: :lol:

I fondly remember a Thanksgiving party that I attended many years ago. Because I was single it was thought (by the people hosting) that I might be more comfortable bringing something simple so I was assigned salad.

You should have seen their faces when I showed up with a "SALAD BAR" complete with sneeze guard and set it up in their dinning room. Never again was I assigned something simple. :D :D :D

Probably so, however I did make HER salsa once so maybe that's what you remembered.

As a side dish, we like a tomato and cucumber salad.
8 romas
2 cucumbers
1/2 sweet onion
basil
dill
Your favorite Italian dressing or something homemade

I take the tomatos and cut them in bite size piece. Then remove the seeds.
Cut the cucumbers in half length wise and remove the seeds then cut them thin.
Chop the onion into small pieces
Chop the basil and dill
Add it all to a bowl with a half a bottle of Italian dressing

It is better the second day after it has set in the refrigerator all night.

I really like this one, and it's pretty refreshing. I've found that not everyone is crazy about the combination of ingredients, though. I like 'em all! :D

Hydrating Grape Cucumber Salad

1-2 Large Cucumbers
5 Large Stalks of Celery
Large Bunch of Grapes
Half of One Lemon
Optional: Cilantro
Optional: Mango
Optional: 1/3 of One Avocado

Chop all ingredients as small as you can. you want to try to chop the celery as thin as you can. Dice the cucumber and slice the grapes in half. Squeeze on the half of a lemon. Mix them in a bowl until the juices mix with one another! The sweetness is wonderful!
