Infused vodka

I have a large quantity of some herbs growing here as well as some hot peppers. I'm thinking of doing some infused vodka. What I have alot of - Rosemary, tarragon, thai basil, oregano, sage, thyme and several types of hot peppers esp. asian chilis. Have you ever done this? I have made limoncello several times. Yum. Last year I did herbal vinegars with the extras. Also good.

I have done it w/cranberries.
I thought it was good. (pour a dash of cranberry infused vodka into a glass of champagne and top with a cranberry, very holiday-friendly).
Vanilla beans work well too

BraveDave, your recipe sounds delicious. I must try. Maybe with cranraisns? Thanks for sharing.


BEG, I have never tried it myself. But I did find these recipes under Astray.com. Whatever you try let me know how it work for you. I have plenty of herbs to use myself. Good luck.

I ran a martini bar for a couple of years and we infused several vodkas: A veggie one (for bloody mary's), a sweet tea, a pineapple, a multi-berry, and others I can't remember (stupid first beer of the day fogging my memory) and all I can say is AWESOME!!!! With the herbs, figure 4-5 days to get a good flavor, and you are going to want to open things up to make sure the flavor gets through everything. (For instance, cut the peppers open, gently muddle the herbs first, etc.) Look at it as a grand experiment and enjoy!

How about homemade kahlua...vodak infused (fermented) with instant coffee, a sugar syrup and a vanilla bean. Store for a couple of months and then give as Christmas gifts. :D

There are bunches of recipes on the web for homemade coffee liqueur, ranging from the ridiculously easy to snobbishly complicated. None cost more than 2/3 the price of a bottle of Kahlua or Tia Maria. (search the web for "how to make coffee liqueur")
If you cook using more than a toaster oven, and if you take coffee seriously, then even the toughest recipes should be no challenge for you.
If you are an instant coffee drinker, there are recipes for you too.

Either way, you come out $$$ ahead.

I plan on making mine at the end of Oct so it has time to "mature" for the holidays.

Homemade Coffee Liquor Recipe:

* 4 cups water
* 4 cups sugar
* 2 cups alcohol (vodka for Kahlua, rum for Tia Maria)..and you don't have to buy the good stuff.
* 1 cup dry instant coffee, or 1/2 cup fresh ground coffee (dark brew provides stronger coffee flavor) While fresh ground coffee leads to tastier Kahlua and Tia Maria later, it is also a bit more work intensive down the road. I use instant so I don't have to strain it later.
* 1 whole vanilla bean, split lengthwise, or 1/2 tsp vanilla extract. I think the vanilla bean adds more flavor.

Boil the water and sugar in large pot, until sugar is completely dissolved. Stir.

Remove from heat, cool for half an hour.

Slowly add in the dry instant or fresh ground coffee, stirring continuously.

Add vanilla or vanilla bean to the alcohol (vodka or rum), pour into gallon jug.

Combine cooled sugar syrup and coffee mixture with the vodka or rum in gallon jug.

Cover tightly, and shake every day for three weeks. Store in cool, dark place.

After a month or more, remove vanilla bean (if used) and strain coffee grounds (if fresh ground coffee was used). Discard vanilla bean and coffee grounds.

You can pour this mixture into pint jars, or other "cute bottles" if you wish to give as gifts. :wink:

You can probably find several recipes on the web. I used to make it years ago along with Irish Cream. Great Christmas presents.

No vodka, but this recipe makes very good peppermint schnapps. Its a staple during the winter.

11 C. water
6 C. sugar
1 oz. peppermint extract
1 750 ml Everclear

Combine the water and sugar in a big pot and bring to a boil. Boil for 2 min. Reduce heat and simmer for 20 min. Remove from heat and cover and let sit for 6 hours. Add the extract and Everclear. It’s ready to bottle. Makes about 5, 750 ml bottles .

YUM!! My daughter's favorite for her holiday parties. Is this semi thick, you know like a sugary syrup? Does it have to "mature" or can you make this the week before?

I've only drank it, never made it. I do not think it needs to mature. It is thicker than water. Its very smooth but certainly packs a punch. Only peppermint schnapps I like other than this is Rumplemintz(sp?)
