pickles
I am making pickles to sell at farmers markets. They are refrigerator pickles, not cooked so they stay crisp and not canned. I will make a basic dill, a spicy and a sweet. I will also pickle other items in season such as asparagus, green beans, gardinier. Any tips? Any fave recipes? If the pickles were good what might you be willing to pay for a quart?

The PHarms and I love the spicy/sweet pickles you can make from dills.
Chop up dill pickles that come in the HUGE glass jars.
Toss the juice.
Stuff the pieces back in the jar.
Add a 5 lb. bag of sugar. (It'll be a tight fit.)
Add a jar of Tabasco sauce. (Less if you don't like spicy. I usually use about 1/2 the jar.)
Add 2 TBS of pickling spice.
Put the lid on really tight.
Turn the pickle jar upside down every other day.
In a week, you'll have crunchy, spicy, sweet pickles with lots of juice.
I don't know about pricing. I think a quart of dill pickles at our farmers' market goes for $7, but I'm not 100% sure.

I'm a 'boring' purist. I like just dill. No sweet. And I'd pay $3-4 for a good sized jar.

Love a good Bread & Butter Pickle, also like the spicky sweer ones..
