Years ago, there was an album of songs the Grateful Dead covered called The Music Never Stopped: The Roots of the Grateful Dead. I'd love to see a similar project devoted to Buffett including the original versions of songs he's covered both on record and in concert. In some cases, such as Lord Buckley's "God's Own Drunk" and Roger Bartlett's "Dallas" (as well as others) it's going to be hard to find them on YouTube but here's a few. Some of these are also going to be co-writes such as "Railroad Lady" (co-written with Jerry Jeff Walker) and "Door Number 3" (co-written with Steve Goodman) but hearing their versions over the years has also been a real treat.

I read somewhere that Cockburn wasn't really that crazy about Jimmy's cover because it was to "true" to his, which I thought was a little weird...

I actually prefer it when an artist puts their own spin on their versions of other people's material. Otherwise, there's really little reason to cover it. There's lots of examples but one that comes to mind is Jane's Addiction's version of the Grateful Dead's "Ripple" from the Deadicated tribute album. Another would be Johnny Cash's version of "Hurt" by Nine Inch Nails. With that, Cash even went so far as to make that song his own. He had a huge knack for that.

Or attend any Bob Dylan concert when he reinvents his own songs to the point that they are unidentifiable.

While that would be nice, I'm more interested in folks posting the original versions. As I mentioned, unfortunately not all of them are on YouTube. I also realize that some of the ones I've posted are live versions and not the original studio versions but that's also ok. In some cases the original studio versions also aren't available on YouTube. Most of all, a collection of the original songs would be very nice but due to all the legal wrangling involved because of all of the artists being on different labels, that'll probably never happen.

Sorry, for the life of me I can not figure out how to post the actual videos.
It took me a while to figure it out too. You just use the "ID" portion of the url then wrap that in the YouTube tags. You can quote this post to see what I did.

I know you wanted originals, I just meant that he had a list of songs he had covered. There were a lot of songs I didn't realize he'd done at various concerts, thus giving people more material to search for.
