Good morning. One of the Octoberfests here was postponed 3 weeks ago because of all the rain and flooding we had. It was rescheduled for this weekend. It's supposed to be 75 and sunny today, I might have to take a ride and see what kind of beer they have.

Molly, I believe you have more heavy rain coming.
For the old timers...Maureen O'hara passed away today. I met her back in the late 70's. Her husband at the time was Charlie Blair, owner and president of Antillies Airways, a seaplane airline in the Virgin Islands. He passed away in 1978(?), she took over his position with Antilles Airways. She was a guest at our formal Navy affair at the Naval base in Puerto Rico. I remember flying at least 2 search and rescue flights for Antilles crashes.

It seems to be raining all around us, but I'm not complaining. We really need this soaking type moisture.
I hate to hear about Maureen. She was quite a woman...or I always thought so.
I loved her movies with John Wayne...LOVED The Quiet Man.

So, up early this AM to get the rillettes cooking.
I've had a couple of pounds of pork shoulder marinating in white wine, garlic, bay leaves and lemon thyme over night.
Fried off a big ol' chunk of pork fat in a cast iron baking dish - to render out the lovely, tasty fat.
With the dish smoking hot I added the pork and marinade and browned it all. The house smells of lemon and bay.
Now it is in the oven for about 3 hours.
The smells are making me ravenous. I suspect I'll be firing up the grill to cook some bacon and sausage before too much longer. Although I might let the sun come up first.

I only discovered rillettes last Christmas.
I seriously wish people would stop hiding such great foods from me...

Here's a great food. I made this for dinner tonight.
Mushroom lasagna with bechamel.

Hellooooooooo out there!
Phun food stuff today.
I avoided work,but wasted most of the day.A large pizza with beer at a great country bar was the highlight of the day.
