April 8 recognizes a food holiday, National Empanada Day. Empanadas are a stuffed bread or pastry that is baked or fried. The name empanada comes from the Galician, Portuguese and Spanish verb em pandar, meaning to wrap or coat in bread.
Empanadas are made by folding the dough or bread around a seasoned stuffing. The filling usually is made from meat, cheese, vegetables or fruits but may be made with other ingredients.
A cookbook published in 1520 in Catalan, the Libre del Coch by Ruperto de Nola, mentions empanadas filled with seafood.
In the Southern and Southwestern United States, empanadas are called Creoles. They are a half-circle flaky crust filled with seasoned pork, beef or chicken, and cheese. In the Southeastern United States, empanadas are referred to as a “fried pie” and are a pastry filled with fresh or reconstituted dry fruit such as apples, apricots, peaches or sweet potatoes and then fried. In New Mexico, it is a winter tradition to make sweetmeat empanadas for Christmas. They are made with ground pork, sugar, pinon nuts, cinnamon, cloves and nutmeg, sealed in a tortilla-like dough and then deep fried in lard.

Good morning! Have always wanted to make fried pies, but haven't done it yet. Hubby just made me a yummy breakfast, eggs, hash browns n bacon! Sipping coffee and trying to decide what to wear to the Eagles concert later today. Wish it wasn't so cold so I wouldn't need a coat...
We had a cold front blow in yesterday. One day it was about 80...last night it was in the 40s.
People were bundled up llike it wa s snowing. Ski hats, gloves, scarves, heavy coats. Granted, we were kinda outside, but it wasn't winter cold.
When Old Chicago Pizza & Taproom opened last year, I signed up for their email newsletter. They always ask for your date of birth when you sign up for those things. I just got an email with a coupon for a free pizza for my birthday. They have a really good beer selection too. That'll be lunch one day this week.
“Painting with a broad brush....” Didn’t think to many folks from the East Coast would know about Empanadas as it’s a Southwest influenced treat. And then you can open the whole can of where the best Southwest/Mexican food comes from. Now that can turn into one of those deeply personal topics like politics, religion and Jimmy doing too many covers. My wife’s cooking dog cookies today and the SF Giants vs LA Dodgers and a celebration of 60 years of West Coast rivalry starts at noon. The big rain storm the weather forecasters and news folks like to now call, “Atmospheric Rivers,” has come and gone and it’s going to be a beautiful day here in the Sierra Foothills.
I decided to go get a haircut. I got to the place, walked in and there must have been 10 people waiting. The girl at the counter said "hi", I looked around and told her "I'll be back tomorrow." What was I thinking, going for a haircut on Sunday? I'm retired, it's never crowded when I go during the week. What a doofus.

It happens
That's 1 of the things I really like about working shift work. I'm able to get my running around done during the week when most are at work. I do go to town on the weekend but usually early & get things done pretty quick.
